Ingredients:
- 12 corn tortillas
- 1 -lb sausage
- 1 (1-oz) package taco seasoning
- 2 cups salsa divided
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese,
- 16 large eggs
- 1 cup sour cream
Cheese Sauce
- 12 -oz Velveeta
- 1 cup salsa
Instructions:
Preheat oven to 350ºF. Spray a 9×13-inch baking dish with nonstick cooking spray.
Wrap tortillas in a damp paper towel and microwave for 30-60 seconds, until soft. Line the bottom and about an inch up the side of the prepared baking dish with tortillas.
